The awards have piled up for chef-owner Keith Boyle since he moved into his new Suirside premises whose old timbers and brickwork are adorned with photos of local landmarks. The €25 Pre-Dinner Menu, which includes such delights as Beef Tongue with Gherkin, Salad Leaves & Horseradish and Torched Cod with Shrimp, Beans, Yellow Pepper & Brown Butter, is a great introduction to his cooking, but for the full Bay Tree effect go for the Chef’s Surprise Tasting with Matching Wines for €100 per person.
