Owners Conor Mee and Charlotte Carr met while training in the tourism college in Killybegs in County Donegal in the mid-’90s. After working in a variety of successful restaurants they found themselves reunited in Rosso in Dundalk, before deciding to set up in the centre of Carrickmacross. Over the past eight years they’ve established the Courthouse as one of the very best restaurants in Monaghan. For a light supper, try a few of the dishes from their Tapas Menu, which includes Homemade Black Pudding and Roaring Bay Mussels.
