Lambay Irish Whiskey has added their sixth Single Cask Strength Single Malt (Cask 6688) to their growing whiskey fanbase.
A tale of time and tides, Lambay Single Malt is a triple distilled malt whiskey, bourbon cask matured and finished in cognac casks close to the island’s shoreline housed in the bonded warehouse called the Sea Cask Room.
Cask 6688 is the sixth cask release of twenty in this exclusive Premium Cask Programme, which is limited to just 446 bottles. Only around 30 exist in Ireland overall.
Wholly finished in Camus cognac casks, this collection of single malt cask strength casks has been laid on Lambay since 2018. Where seasons have passed and infused these casks with unique maritime notes, all cognac casks used in the finish of this whiskey have been hand-selected for their rich aromatic profile and intense concentration.
Lambay island holds a micro-climate of its own, always one or two degrees warmer than the mainland and perfect for cask maturation. Sea-spray, iodine, brine, and the island's natural botanicals infuse the wood as the Lambay Single Malt matures.

Cask 6688 lay close to the sidewall in this Sea Cask room, receiving a higher impact of sea air maturation and in turn delivering less cognac concentration in the taste. Its racking position ensured sensitivity to the sea air and delivers a higher influence of iodine/brine/salt.
“An intense smoothness is present in this single malt with notes of vanilla, gingerbread, a little bit peppery followed by fresh grain, smooth spice (cinnamon), and dry fruits,” Master Blender, Yonael Bernard, commented.
These oak casks are carried across the sea from the world-renowned cellars of Camus France, and left to sleep in the bonded warehouse on Lambay Island to further mature and refine in aroma and taste. Where the casks are positioned within the warehouse plays a huge role in the flavour composition.

Each bottle from Cask 6688 is recorded with a batch number on the label along with the rare signature of Lambay’s Master Blender, Yonael Bernard. Presented in a craft wood case with a neck tag, the location and unique details of the cask are clearly communicated to the customer, a true collectors whiskey.
The triple distillation of the Single Malt and long period of maturation in the cognac cask on Lambay Island makes for a surprising sweet long-lasting malt finish.
Cask 6688 delivered 446 bottles of Single Cast Strength Single Malt, and will be on sale primarily on Lambay Irish Whiskey’s online shop.
